Because I love my rice so much that I like to do different varieties when it comes to cooking it. When I am not just steaming it plain, I like to mix other things with it and last night I did just so. Since we have some left over rotisserie chicken, I thought I would add that to my rice and some vegetables that we have. Here is what I did.
* Saute' some onions and garlic until the onions have softened and smells good. Add the chicken cut up in to bite size pieces, then some asparagus, mushrooms either fresh or canned (I had some canned mushrooms so that's what I used) and let that going for few minutes, then add your rice. It depends on how much rice you want so it is up to you. Stir it all up to mix together and add some water or chicken broth, then add your flavor booster like the Swanson kind or salt and pepper. The Swanson flavor booster is absolutely delicious and you don't even need to add salt. It has no MSG, so I feel safe using it in my food to boost flavors. I am not paid to mention it, but I thought you might want to try it as it is good.
* Once you added your rice and your broth to the pan, I also added turmeric to give the dish that wonderful golden brown color or bronze to the rice as if you added some saffron in it except you didn't have to spend that much money to buy saffron. Cover it up and wait until the rice is done. When the rice is done, fluff it up using a fork and not a spoon. And you are ready to enjoy your mixed rice with chicken and vegetables. You can use any meat and vegetables you like in this dish. This is good for left overs as well because all you need is just to mix up all things together and it turns up into this delicious dish. ReplyDeleteThat is definitely a great idea Mommy Adin! Kami diri kay bisdak man kaayo oi, binisaya jud among kan-on diri. Mag-fry lang ko ug rice every Sabbath for potluck dish sa church kay pangitaon kaayo sa mga tawo sa church akong fried rice. :D
