Food For Our Tummy

It seems like it has been a long while since I shared some food photos so I thought it would be time to share you some food that we have enjoyed lately. These are just food that I have cooked with no recipe at all, just whatever I can find in the fridge or in the pantry. I am that way when it comes to cooking, there are times I follow a certain recipe, but a lot of times I like to make a meal with whatever we have on hand and cook away.

 
The first one I called it Pasta Ala Adin because I really don't know what to call it. Maybe a creamy pasta of some sort? These are leftover pastas that I have combined and that creamy sauce is actually not all cheese. I only have about a little block of Parmesan cheese tinier than a matchbox so I chopped that up, mixed it in with some sweet potato and butternut squash that I pureed and it made into a creamy delicious and nutritious sauce. I think this would be a great way to let kids eat something healthy without them even knowing it because they'll think they are eating pasta with tons of cheese like the macaroni and cheese. Except mine is healthier. Hey! Maybe I should have called it the "healthier mac n' cheese". I would have loved it if it was whole grain or whole wheat though, then it would really be more nutritious, but we ran out. We also had some salmon that night and it was one perfect meal combination. I even enjoyed snacking on some leftover pastas the next day.

I know I have already said this before, but this family is a pasta eater just like we love our rice. I cooked up some whole grain pasta the other night, then with the sauce I mixed in with some sweet potatoes and butternut squash because that is what was available at that time. I load up on those at home because sweet potato and butternut squash are wonderful veggies to eat and makes for some yummy healthy sauce.

I am not a frequent coffee drinker, but once in a blue moon I like to drink some just to have something warm in my tummy. If I don't feel like drinking hot choco. I also paired it with a turkey sandwich with smoked cheese on ciabatta rolls, and it was one wonderful breakfast combo.

Beef and Vegetables on rice with Quinoa. I am a huge fan of Quinoa now (didn't use to)and I go crazy cooking with it. A lot of times I like to mix it with my rice now to add more fiber and to eat less white rice. I still can't give up my white rice though, but right now I am eating less and less of my Jasmine white rice.

Eating all vegetables with no rice, but with Quinoa and tofu. I will tell you, before I was a hater for tofu. I did not understand how my cousins love to eat tofu when all it is, is just some bland, yucky textured food. But later on, I acquired the taste for tofu and now I am a fan. I love having me some miso soup whenever we go to a Japanese Sushi Bar and scoop up those tiny cubes of tofu. Good stuff!
There you go! These are some of the food that my family and I enjoy eating. Don't get me wrong, once in a while we love us some fried stuff!

  3. Wow Mommy Adin, your foods look delish indeed! Can I have me some of that pasta ala Adin?...I'm not a fan of fish though(I only eat Filipino dried fish).LOL!

  5. I love pasta, Mommy Adin! Gosh, you made me so hungry right now kay wa pa raba ko kakaon ug rice kay sa church mi nag-lunch, we had potluck there and there was no rice. LOL.
